Lemon Pudding

Still using lemons in this cloud like, melt in your mouth sweet but also sour lemon pudding. There are lots of pudding recipes out there and i have tried a few. This one is very easy, you can cook it in a large dish or in individual ramekins.





Lemon Pudding

3 Eggs separated
1/4 cup Sugar
2 Tbl Plain Flour
11/2 tsp dry Lemon Zest or zest of two lemons
1/4 cup Lemon juice
1 cup Milk
1/4 tsp Salt
Icing Sugar to dust

Lightly butter or spray your dish and place in a baking pan with water to half way up your dish.
Heat oven to 175 Celsius or 350 Fahrenheit.

Whisk egg yolks and sugar until light, add flour, lemon zest, juice and milk. Whisk to combine.
Beat egg whites and salt until soft peaks form. Gently fold whites into lemon mix.
Pour into your dish. It will be very thin and runny with clouds on top. See below.


Cook for about 25 minutes, keep an eye on it, if it starts to get too brown then turn it down or take it out.
 It will be very wobbly when you move the dish. Once its brown and wobbly then its cooked.


Mine could have been in the oven probably 5 minutes less as it was a little over browned, however that didn't affect the flavour or the texture.
Dust with a little icing sugar to serve if you like.
